These Raspberry and Chocolate Drizzle Flapjacks are super delicious and are perfect partnered with a cuppa or coffee. They are gluten free, dairy free, refined sugar free, nut free and vegan and contain only natural, wholesome ingredients therefore you can have a sweet treat while knowing you are filling your body with nourishing fuel. I often make a batch on a Sunday and pop them into the fridge to snack on while on the go during the week. Ever since eating the most amazing Butternut Squash Risotto at the wonderful 5* Fitzwilliam Hotel, Belfast in October I have been dreaming of experiencing the deliciousness of the dish again. It was one of the most amazing meals I've ever eaten, and being so creamy and luxurious it was hard to believe it was gluten and dairy free!


Since then I have been trialling and trialling different recipes and ingredient variations to try and recreate the amazingness of that meal. It has taken many many failed attempts but  I can gladly say - I think I've finally cracked it!

What's ever better is that I've managed to keep this recipe really healthy and nutritious while still ensuring that it is wonderfully comforting and delicious; making it the perfect mid-week meal. I've also used cost-effective ingredients meaning that you get a 5* meal at next to no cost. It really doesn't get much better than that!

The Best Pancakes! (Gluten Free, Dairy Free, Refined Sugar Free)

I bloomin' love pancakes! I actually think that if I had to choose one food to eat for the rest of my life that it would be pancakes - just think of those endless variations of toppings!

With my love of pancakes you can imagine how devastated I was when I had to cut gluten and dairy out of my diet. How would I be able to cope without my Sunday morning ritual of pancakes for breakfast? I wasn't going to settle on just going without so my mission to find the perfect gluten and dairy free pancakes commenced.

I searched and searched and tried and tried but no matter how many recipes or packets I tasted nothing was living up to my pancake expectations (in fact some of them were pretty gross). There's lots of great crepe style recipes out there but I was after the proper 'like granny used to make' style.

Healthier than Heinz Tomato Soup (Gluten Free, Dairy Free, Refined Sugar Free, Low Salt)

Is there anything more comforting than a warming bowl of soup on a cold Winter's day; especially when that bowl of soup takes you right back to your younger years?




I used to love a big bowl of Heinz Tomato Soup for lunch in my pre-allergy days therefore it just made sense for me to create my own tomato soup recipe that was allergy free. As an added bonus I also managed to make it low salt, refined sugar free and super healthy while still keeping all of that creamy, tomatoey flavour. It really is the perfect soup for the whole family!

This recipe takes only 30 mins to make from start to finish which makes it the perfect lunchtime meal. It also makes it super convenient to pre-make the night before for a quick grab and go lunch to heat up in work. It will keep in the fridge for 2 days so I always make it in multiple portions to last a couple of days.

Simple 5 Ingredient No Fail Risotto (Gluten Free, Dairy Free)

As we begin to nosedive into the mists of Winter, and the coldness that it brings with it, there is nothing better than ending the day with a warming, comforting and super satisfying dinner and Risotto is the definition of all those things!

This is the simplest of risotto recipes that takes very little effort therefore it makes the perfect mid-week meal for the whole family. And forget all of that constant stirring and adding liquid at intervals malarky - this is a put it all in the pan, stir when you remember and don't think too much about it recipe - my favourite kind!

This is also a very versatile recipe meaning you can use whatever meat and veg you want, or whatever is in the fridge which is usually the case for me.

Simplicity, Versatility and Deliciousness... I know I'm biased but this one really is a winner!
